PASTIERA

Traditional Italian Easter sweet pie from Naples, lined with pastry crust and filled with cooked wheat, ricotta and candied orange zest.

Ingredients (8 servings)

Cooked wheat
100 gr (1,76 oz) soft white wheat berries
250 ml (1 cup) whole milk
1 tsp sugar
½ tsp cinnamon powder
1 pinch salt
sliced zest of ½ organic lemon 

Pie crust
100 gr (1 cup) confectioner’s sugar
250 gr (2 cups) wheat flour type 00
3 to 4 egg yolks 

125 gr (1 stick) cold unsalted butter cut into small cubes
1 pinch salt  

Custard cream
2 tbsp sugar
seeds of ½ vanilla pod
1 tbsp wheat flour
1 tbsp corn starch
2 egg yolks
250 ml (1 cup) milk

Registration can only be made online, from this website, with advance payment by credit card or PayPal, within midnight of the day before the class is held. Private groups are also available upon request. Classes are small and fill-up quickly, so if you want to join
