SPAGHETTI AGLIO E OLIO

Long durum wheat pasta with garlic, extra-virgin olive oil and chili pepper sauce: easy, quick and tasty traditional Italian first course.

INGREDIENTS (4 servings)

400 gr (14 oz) spaghetti n°5
2 garlic cloves, cleaned and chopped
4 tablespoons extra-virgin olive oil
1 chili pepper
1 bunch parsley, clean and chopped
sea salt

PROCEDURE

  1. In a saucepan heat the olive oil over medium heat
  2. Add the chopped garlic and cook until golden being careful not to let it burn
  3. Add chili pepper, mix well and turn off the fire
  4. Boil spaghetti in 3 liters of salted water and cook them for around 8 minutes (read exact timing on the box, no ceiling sticking please!)
  5. Drain the pasta "al dente", keep one cup of cooking water
  6. Pour the drained pasta into the pan with olive oil, garlic and chili pepper together with the cup of cooking water, switch on the fire again and finish cooking for 3 to 4 minutes
  7. Serve with chopped parsley on the top
  8. In the summer we sometimes add some fresh cherry tomatoes and/or olives

Registration can only be made online, from this website, with advance payment by credit card or PayPal, within midnight of the day before the class is held. Private groups are also available upon request. Classes are small and fill-up quickly, so if you want to join
